| Calpain 1 (mu-calpain), a calcium-dependent cysteine C2 endopeptidase, is involved in myofibrillar protein degradation. In skeletal muscles, activation of Calpain I results in degradation of skeletal structural proteins, improving meat tenderness. Calpains I is inhibited by the endogenous inhibitor calpastatin and by leupeptin. Calpastatin is inactivated in postmortem skeletal muscle.
