Saccharolytic species form acid and gas without digesting the meat. Proteolytic species form sulfur compounds (putrid smell) and break down the meat to amino acids (blackening). Also suitable for recovery of Clostridium botulinum from foods. | | Expected cultural response after 48-72 hours at 35.0°C. | | Reconstitution | Place 1.25g of meat granules into a test tube. Add 1ml purified water.
