"Death Valley Salsa"

Style:   Tex-Mex
Serves:   4


  • 4 16oz cans of Diced Tomatoes
  • 1/4 cup of cooking oil
  • lots of garlic
  • 4 medium onions (yellow are best)
  • 1 bunch of cilantro - fresh is best, including stems
  • 1/2 tsp of salt
  • 6 freshly roasted Jalapeno or Habanero peppers, diced


Mix all ingredients. Roast the chiles, peel them and then put them in the salsa. Use Habanero if you can get them and if you dare. Otherwise, you can chicken out with Jalapeno or Serrano. Use latex gloves!!
